If you've decided to start your own commercial pizza business, then you are going to need a pizza oven to cook your pizzas. There are several different types of commercial pizza ovens, like from American Baking System, to choose from. Some are designed specifically for certain types of businesses, such as street vendors. To help you decide which type of pizza oven is right for your business, here is a brief description of each of the four most common types of commercial pizza ovens:

1. Conveyor Ovens

Conveyor ovens cook pizza quickly and evenly. In fact, this is the most efficient oven for fast-food and high-volume pizza restaurants. It works by first placing a freshly prepared raw pizza on one end of a conveyor belt. The pizza will then move through and come out of the other perfectly cooked. These ovens come in both electric and gas.

The downside to conveyor ovens is that they must be watched closely to avoid pizzas from falling off the conveyor belt and essentially being ruined.

2. Convection Ovens

Probably one of the cheaper ovens, convection ovens are very efficient for most commercial cooking of pizzas. It works by circulating hot air within the stove. This allows for even cooking throughout the entire pizza so that there are no cold or hot spots. It can also be used for a variety of other types of baking.

3. Cart Ovens

If you have a food truck that you take to local carnivals and fairs, then a cart oven is what you need to cook pizzas for customers. These are small in size, which ensures that transportation is easy. These types of ovens can be powered be either electricity or gas. These are also ideal for street vendors.

4. Deck Ovens

This is probably one of the most popular types of ovens used for cooking pizza. It is easy to use and cooks the pizza quickly, yet thoroughly. Some deck ovens come with a ceramic-based deck that assists in ensuring heat is distributed evenly while also maintaining the heat in between multiple pizzas. These are equipped with timers, which allows you to multi-task in the kitchen without having to worry about your pizza burning or falling off into the floor.

When compared to other types of pizza ovens, deck ovens offer the closest to gourmet quality pizza cooked in a wood-burning stove. For that reason, if you plan to open an artisan pizza cafe or high-end pizza parlor, a deck oven is the best choice.

Choosing the right type of oven for your pizza business will require that you consider the pros and cons of each oven as well as the specific type of business that you have.
